Ingredients
2 cups all-purpose flour
1/2 teaspoon salt
1 cup unsalted butter, chilled and cubed
1/4 cup ice water
8 ounces cream cheese, softened
1/2 cup granulated sugar
1 teaspoon vanilla extract
1 cup diced fresh strawberries
1 egg, beaten
Instructions
1. In a food processor, combine the flour and salt. Add the chilled butter cubes and pulse until the mixture resembles coarse crumbs.
2. Add the ice water and pulse until the dough just starts to come together. Divide the dough in half, shape into discs, wrap in plastic, and refrigerate for at least 30 minutes.
3. In a medium bowl, beat the cream cheese with the sugar and vanilla until smooth and creamy.
4. Roll out one disc of dough to a 12-inch square. Cut into 9 equal squares.
5. Place a heaping tablespoon of the cream cheese mixture in the center of each square. Top with a spoonful of diced strawberries.
6. Fold the corners of the dough over the filling to create a heart shape. Pinch the edges to seal.
7. Transfer the danishes to a parchment-lined baking sheet. Brush the tops with the beaten egg.
8. Bake at 400°F for 15-18 minutes, or until the pastry is golden brown.
9. Serve warm or at room temperature. Enjoy!
