Description

This Shaved Asparagus & Fennel Salad is a refreshing and flavorful side dish that’s perfect for spring and summer. The combination of tender shaved asparagus, crisp fennel, and a bright lemon-based dressing creates a delightful balance of textures and flavors.

Ingredients

– 1 lb fresh asparagus, shaved into thin strips

– 1 medium fennel bulb, thinly sliced

– 2 tablespoons olive oil

– 2 tablespoons lemon juice

– 1 tablespoon white wine vinegar

– 1 teaspoon Dijon mustard

– 1 garlic clove, minced

– Salt and freshly ground black pepper, to taste

– Chopped fresh parsley, for garnish

Instructions

1. In a large bowl, combine the shaved asparagus and sliced fennel.

2. In a small bowl, whisk together the olive oil, lemon juice, vinegar, Dijon mustard, and garlic. Season with salt and pepper to taste.

3. Pour the dressing over the asparagus and fennel, and toss gently to coat.

4. Garnish the salad with chopped fresh parsley.

5. Serve chilled or at room temperature.

Notes

For best texture, be sure to shave the asparagus and fennel thinly. This salad can be made ahead of time and refrigerated for up to 2 days. Adjust seasoning as needed before serving.
