Description

This Roasted Apricot Chicken Dinner is a delicious and easy-to-make weeknight meal. Tender chicken is baked with a sweet and tangy apricot glaze, creating a comforting and flavorful dish that the whole family will love.

Ingredients

– 6 boneless, skinless chicken breasts

– 1 cup fresh apricots, pitted and halved

– 2 tablespoons olive oil

– 1/4 cup apricot jam

– 2 tablespoons balsamic vinegar

– 2 cloves garlic, minced

– 1 teaspoon dried thyme

– 1/2 teaspoon salt

– 1/4 teaspoon black pepper

Instructions

1. Preheat your oven to 400°F (200°C).

2. In a large bowl, combine the chicken breasts, halved apricots, olive oil, apricot jam, balsamic vinegar, garlic, thyme, salt, and pepper. Toss to coat the chicken and apricots evenly.

3. Transfer the chicken and apricot mixture to a baking dish or sheet pan, arranging the chicken in a single layer.

4. Bake the Roasted Apricot Chicken Dinner for 25-30 minutes, or until the chicken is cooked through and the apricots are softened and caramelized.

5. Serve the Roasted Apricot Chicken Dinner warm, garnished with additional fresh thyme if desired. Enjoy!

Notes

For a richer, more caramelized glaze, broil the chicken for the last 2-3 minutes of cooking. You can also use boneless, skinless chicken thighs instead of breasts for a juicier texture. Serve this dish with roasted vegetables and rice or mashed potatoes for a complete meal.
