Description

Indulge in the vibrant, creamy goodness of homemade Pink Beet Pasta Sauce (Barbie Pasta)! This easy-to-make sauce combines the natural sweetness of roasted beets with garlic, cream, and a hint of spice for a truly delightful pasta dish.

Ingredients

– 3 medium-sized beets, peeled and quartered

– 3 cloves garlic, minced

– 2 tablespoons olive oil

– 1 cup heavy cream

– 1 teaspoon salt

– 1/2 teaspoon black pepper

– 1/4 teaspoon cayenne pepper (optional)

– 12 ounces pasta of your choice

Instructions

1. Preheat your oven to 400°F (200°C).

2. Toss the peeled and quartered beets with the minced garlic and olive oil. Spread them out on a baking sheet and roast for 30-40 minutes, or until the beets are tender and easily pierced with a fork.

3. Once the beets are roasted, transfer them to a blender or food processor. Add the heavy cream, salt, black pepper, and cayenne pepper (if using). Blend until smooth and creamy.

4. Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente.

5. Drain the pasta and return it to the pot. Pour the Pink Beet Pasta Sauce over the pasta and toss gently to coat.

6. Serve the Pink Beet Pasta (Barbie Pasta) immediately, garnished with fresh basil leaves, grated parmesan, or your desired toppings.

Notes

– For a thicker sauce, use less cream or let the sauce simmer for a few minutes to reduce.

– Experiment with different types of pasta, such as penne, rigatoni, or fusilli, for variety.

– Store any leftover sauce in an airtight container in the refrigerator for up to 5 days.
