Description

Indulge in the ultimate flavor fusion with this easy Pesto Caprese Press! Featuring a delightful blend of fragrant pesto, creamy mozzarella, and juicy tomatoes, all sandwiched between crisp bread for a delicious and satisfying snack or appetizer.

Ingredients

– 8 slices sourdough bread

– 1 cup fresh basil pesto

– 8 ounces fresh mozzarella cheese, sliced

– 1 pint cherry tomatoes, sliced

– 2 tablespoons olive oil

– Salt and pepper to taste

Instructions

1. Spread a generous amount of pesto on one side of each bread slice.

2. Layer the mozzarella slices and tomato slices on 4 of the pesto-coated bread slices.

3. Top with the remaining 4 pesto-coated bread slices to create 4 sandwiches.

4. Heat a large skillet or griddle over medium heat. Brush the outside of the sandwiches with olive oil.

5. Cook the sandwiches for 2-3 minutes per side, pressing down gently with a spatula, until the bread is golden brown and the cheese is melted.

6. Remove from heat, slice in half, and serve warm.

Notes

For extra flavor, try adding a drizzle of balsamic glaze or a sprinkle of grated Parmesan cheese. This Pesto Caprese Press can also be made ahead and refrigerated until ready to cook and serve.
