Ingredients

– 2 cups all-purpose flour

– 1 tablespoon baking powder

– 1/2 teaspoon salt

– 1 1/2 cups milk

– 2 eggs

– 4 tablespoons unsalted butter, melted

– 1 cup chopped kimchi

– 1/2 cup thinly sliced scallions

Instructions

1. In a large bowl, whisk together the flour, baking powder, and salt.

2. In a separate bowl, whisk together the milk, eggs, and melted butter.

3. Pour the wet ingredients into the dry ingredients and stir just until combined (do not overmix).

4. Fold in the chopped kimchi and sliced scallions.

5. Preheat a waffle iron and spray with nonstick cooking spray.

6. Scoop the batter onto the hot waffle iron and cook until golden brown and crispy, about 4-5 minutes.

7. Serve the Kimchi Scallion Waffles warm, with additional toppings like gochujang sauce, scallions, and kimchi if desired.

Notes

For a spicier version, increase the amount of kimchi used. You can also experiment with different types of kimchi to find your favorite flavor profile.
