2. Pat the chicken dry with paper towels and place it in a roasting pan or on a baking sheet.
3. In a small bowl, mix together the olive oil, thyme, rosemary, parsley, and garlic. Rub the herb mixture all over the chicken, including under the skin and in the cavity.
4. Season the chicken generously with salt and pepper.
5. Truss the chicken by tying the legs together with kitchen string and tucking the wing tips under the body.
6. Roast the chicken for 30-40 minutes, or until the internal temperature reaches 165°F (75°C) and the juices run clear when the thigh is pierced.
7. Remove the chicken from the oven and let it rest for 10-15 minutes before carving and serving.
8. Serve the Herb-Roasted Whole Chicken with the roasted lemon wedges on the side.
Notes
– For extra crispy skin, you can baste the chicken with the pan juices halfway through the cooking time.
– Try stuffing the cavity with additional herbs, garlic, or lemon slices for extra flavor.
– Leftovers can be used for sandwiches, salads, or in other recipes.
