Description

Indulge in the delectable combination of sweet, grilled apricots and creamy goat cheese atop crisp crostini. This quick and easy appetizer is perfect for any occasion, from casual gatherings to elegant soirees.

Ingredients

– 6 ripe apricots, halved and pitted

– 1 baguette, sliced into 1/2-inch thick rounds

– 8 ounces goat cheese, softened

– 2 tablespoons olive oil

– 1 tablespoon honey

– 1/4 teaspoon salt

– 1/8 teaspoon black pepper

Instructions

1. Preheat grill or grill pan to medium-high heat.

2. Brush the apricot halves and baguette slices lightly with olive oil.

3. Grill the apricots for 2-3 minutes per side, until lightly charred and softened.

4. Grill the baguette slices for 1-2 minutes per side, until toasted and crispy.

5. Spread a layer of goat cheese onto each crostini.

6. Top each crostini with a grilled apricot half.

7. Drizzle the crostini with honey and sprinkle with salt and pepper.

8. Serve immediately while the apricots and goat cheese are still warm.

Notes

For a firmer texture, use slightly underripe apricots. You can also try using different types of cheese, such as brie or feta. The crostini can be assembled ahead of time and refrigerated until ready to serve.
