Indulge in the perfect balance of sweet and tangy with this Fruit Pizza featuring a buttery sugar cookie crust and a vibrant array of fresh fruit toppings. This easy-to-make dessert is a crowd-pleasing showstopper that’s sure to impress.

Ingredients

– 2 cups all-purpose flour

– 1 cup unsalted butter, softened

– 1 cup granulated sugar

– 1 egg

– 1 teaspoon vanilla extract

– 1/2 teaspoon salt

– 8 ounces cream cheese, softened

– 1/2 cup powdered sugar

– 1 tablespoon lemon juice

– Assorted fresh fruit (such as strawberries, kiwi, pineapple, blueberries)

Instructions

1. Preheat the oven to 350°F. In a large bowl, cream together the butter and granulated sugar until light and fluffy.

2. Beat in the egg and vanilla extract. Gradually add the flour and salt, mixing until a dough forms.

3. Press the dough into a 12-inch round pizza pan or a large rectangular baking sheet, creating a slight edge around the sides.

4. Bake for 12-15 minutes, or until the crust is lightly golden. Allow to cool completely.

5. In a medium bowl, beat the cream cheese with the powdered sugar and lemon juice until smooth and creamy.

6. Spread the cream cheese mixture evenly over the cooled sugar cookie crust.

7. Arrange the assorted fresh fruit in a visually appealing pattern over the cream cheese topping.

8. Refrigerate the fruit pizza for at least 30 minutes before serving to allow the flavors to meld.

9. Slice and serve chilled, garnished with additional fruit if desired.

Notes

For a fun twist, try using different combinations of fresh fruit to create a unique and colorful design. The sugar cookie crust can also be made in advance and stored in an airtight container until ready to assemble.
