Ingredients

– 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces

– 1 red bell pepper, sliced

– 1 green bell pepper, sliced

– 1 onion, diced

– 2 cloves garlic, minced

– 1 tablespoon chili powder

– 1 teaspoon cumin

– 1 teaspoon smoked paprika

– 1/2 teaspoon salt

– 1/4 teaspoon black pepper

– 1 cup shredded Cheddar cheese

– 1 cup shredded Monterey Jack cheese

Instructions

– Preheat the oven to 375°F.

– In a large bowl, combine the chicken, bell peppers, onion, garlic, chili powder, cumin, smoked paprika, salt, and black pepper. Stir to coat the chicken and vegetables.

– Transfer the mixture to a 9×13-inch baking dish and spread it out evenly.

– Sprinkle the Cheddar and Monterey Jack cheeses over the top.

– Bake for 30-35 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.

– Remove from the oven and let cool for 5 minutes before serving.

Notes
