Description

Elevate your meals with this quick and easy homemade Garlic Scape Pesto! This vibrant green condiment is bursting with fresh, bold garlic flavor and can be used in countless ways – from tossing with pasta to spreading on sandwiches and more.

Ingredients

– 2 cups packed garlic scapes, chopped

– 1/2 cup toasted pine nuts

– 1/2 cup freshly grated Parmesan cheese

– 1/2 cup high-quality olive oil

– 2 tablespoons fresh lemon juice

– 1/4 teaspoon salt

– 1/4 teaspoon freshly ground black pepper

Instructions

1. In a food processor, combine the chopped garlic scapes, toasted pine nuts, Parmesan cheese, olive oil, lemon juice, salt, and pepper. Pulse until a coarse pesto forms, scraping down the sides as needed.

2. Transfer the pesto to an airtight container. If not using immediately, top with a thin layer of olive oil to prevent browning.

3. Use the pesto as a sauce for pasta, a spread for sandwiches, a topping for pizza, or a dip for fresh bread. Enjoy!

Notes

– Store leftover pesto in the refrigerator for up to 1 week, or freeze for longer-term storage.

– Adjust the consistency of the pesto by adding more or less olive oil to your desired texture.

– Experiment with different nuts, such as walnuts or almonds, in place of pine nuts.
