Description

Dump And Bake Chicken Tzatziki Rice is a quick and easy weeknight meal that combines tender chicken, fluffy rice, and a creamy tzatziki sauce all baked together for a flavorful and satisfying dish.

Ingredients

– 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces

– 1 cup uncooked long-grain white rice

– 1 cup chicken broth

– 1 cup plain Greek yogurt

– 2 tablespoons fresh lemon juice

– 2 cloves garlic, minced

– 1 teaspoon dried dill

– 1/2 teaspoon salt

– 1/4 teaspoon black pepper

Instructions

1. Preheat oven to 375°F.

2. In a large baking dish, combine the chicken, rice, and chicken broth. Stir to mix well.

3. In a separate bowl, whisk together the Greek yogurt, lemon juice, garlic, dill, salt, and pepper.

4. Pour the yogurt mixture over the chicken and rice, and stir to coat everything evenly.

5. Cover the baking dish with foil and bake for 35-40 minutes, or until the chicken is cooked through and the rice is tender.

6. Remove the foil and bake for an additional 5 minutes to allow the top to lightly brown.

7. Serve hot and enjoy!

Notes

For a creamier texture, add an extra 1/4 cup of chicken broth. You can also top with chopped fresh parsley or diced cucumbers for extra freshness.
