Description

Indulge in the irresistible flavors of these Cheesy Baked Vegetable Rolls! Filled with a delicious blend of roasted vegetables and melty cheese, this easy-to-make dish is perfect as an appetizer, side, or even a light main course.

Ingredients

– 2 cups mixed chopped vegetables (such as zucchini, bell peppers, onions)

– 1 cup shredded mozzarella cheese

– 1/2 cup grated Parmesan cheese

– 1 sheet puff pastry, thawed

– 1 tablespoon olive oil

– 1 teaspoon dried Italian seasoning

– 1/4 teaspoon salt

– 1/4 teaspoon black pepper

Instructions

1. Preheat your oven to 375°F (190°C).

2. In a large bowl, toss the chopped vegetables with olive oil, Italian seasoning, salt, and pepper.

3. Unroll the puff pastry sheet and cut it in half lengthwise to create two long rectangles.

4. Spread the seasoned vegetables evenly over the puff pastry, leaving a 1-inch border on all sides.

5. Sprinkle the mozzarella and Parmesan cheeses over the vegetables.

6. Starting from the long side, tightly roll up the puff pastry to enclose the filling.

7. Slice the rolled puff pastry into 1-inch thick rounds and place them on a baking sheet lined with parchment paper.

8. Bake for 20-25 minutes, or until the pastry is golden brown and the cheese is melted and bubbly.

9. Serve hot and enjoy!

Notes

For a crispier texture, you can brush the tops of the rolls with a beaten egg before baking. Feel free to experiment with different vegetable combinations to suit your taste preferences.
